INDUSTRY ALES DRAFT LIST

Brewed as an homage to our storefront neighbor Central Camera, a 120-plus year old establishment that is a 3rd generation family-run business. Out of Focus IPA is simple in nature, but delivers on what many so enjoy about this style: all the hoppy, juicy flavor with none of the bitterness. For our version, we use Citra, Sabro, Dolcita and HBC 472 hops to punch up the flavors of coconut, strawberry, ripe melon and pineapple. The malt is a mix of pale, pilsner, oats, wheat and dextrin malt.
Out Of Focus
Hazy IPA, 5.8%

Wanting to make something other than an IPA for our wet-hop beer this year, we took inspiration from English Pale Ales. 100% of our malt came from Great Lakes Malting, who source all their grain from Michigan farmers. We gave this beer a sizeable charge of fresh picked Chinook hops from our friends at Hop Head Farms. The result is a golden orange beer with a rich pineapple hop aroma, filled with resinous oils and a touch of dank green grass. The flavor has a hint of the signature English Ale yeast underneath the fresh hops. The bitterness is mild, not as aggressive as an IPA, but finding a nice balance in the middle.
Good, Better, Best Coast Pale Ale
Wet-Hopped English-Style Pale Ale, 5.3%
Wanting to make something other than an IPA for our wet-hop beer this year, we took inspiration from English Pale Ales. 100% of our malt came from Great Lakes Malting, who source all their grain from Michigan farmers. The aroma is primarily bakers chocolate, toasted bread, and earthy hops. The flavor follows suit, and delivers a dry chocolate flavor up front, with just a slight level of bitterness to balance the malt. The finish is light, dry and smooth.

Brewed with 2-Row and White Wheat, Willamette hops, and Omega Yeast's Tartango, then back-blended with Tart Cherry Juice. The appearance is a hazy rose-colored body topped by an initial pink foam that slowly dissipates. The aroma is packed with a tangy bouquet of cherry, unripe peach and tangy lemon. The flavor is clean; a tart acidic bite with notes of sour cherry. Huge carbonation keeps this light beer feeling as refreshing. Light-bodied and dry, and perfect for pairing with tacos or burgers.
Inspired by a Mezcal Paloma, we took a Gose base recipe, and added oak-smoked wheat malt and grapefruit peel to give us a more nuanced experience that marries smoke, salt and tartness in a unique, refreshing, patio-friendly beer. This beer is incredibly good for pairing food with, and will also make a killer beermosa with grapefruit juice!

Cocktail Inspired Series #3, Mezcal Paloma Gose, 5.0%
Inspired by a Mezcal Paloma, we took a Gose base recipe, and added oak-smoked wheat malt and grapefruit peel to give us a more nuanced experience that marries smoke, salt and tartness in a unique, refreshing, patio-friendly beer. This beer is incredibly good for pairing food with, and will also make a killer beermosa with grapefruit juice!

Our seltzer that is Gluten-free, sugar-free, and additive-free. For this turn as we head into winter, we decided to use citrus fruit as the background flavor for our seltzer. Stay tuned for future iterations!

This deep chestnut brown beer is the result of a four-way collaboration with the Design Museum of Chicago, Beer Culture Center, Buckledown Brewing and Industry Ales. We started with a prompt: make a beer that pays homage to beer's collective past while looking forward to our future. We decided on brewing a relatively obscure beer style that was in fashion around post-Prohibition era, the Half & Half. Often this was half porter and half pale ale. So in designing these two beers that were destined to be blended, we made a porter utilizing flaked Kernza (a perennial grain that can be harvested for several years without replanting, that has an incredible root structure to help prevent soil erosion) and a pale ale utilizing Fonio (a savannah grass that is incredibly draught tolerant and related to millet). The hops used in both beers were all part of the USDA's hop growing trials, which are publicly available hops that are bred to be more disease resistant, have better yield, and are proven in brewhouses all around the country for market appeal. The pale ale features Vista and Vera, while the porter features Pahto and HBC 472.

We partnered with Go Brewing to create our very own non-alcoholic beer. We took inspiration from a historic beer style from Germany, the Lichtenhainer. Originally a smokey wheat beer that cam in under 4% ABV, we thought it would translate well to an NA beer given it's light percentage anyway. The result is a light, zippy, gently smoked beer that brings interesting flavor profiles together.
